About Red Cargo Rice
Red cargo is unmilled Thai rice — the red bran layer intact, related to jasmine but cooked whole-grain style. Nutty-chewy with a faint jasmine perfume, it holds up under coconut curries better than white jasmine ever does. The color bleeds rosy into the water; that is the bran, not a defect. Soak 30 minutes for even cores.
