About Wild Rice
Wild rice is Zizania — a grass seed in rice's costume. Cook it like pasta in triple water and drain: the grains are done when they burst open revealing the pale interior. Cultivated paddy wild rice runs uniform; hand-harvested "lake rice" runs smoky and costly. Its chew stands up to vinaigrettes in grain salads where real rice would clump — and soup with wild rice and mushrooms is the classic that justifies the price.
